St. Patty Day Pistachio Ice Cream

Y'all, let's just start out by saying how much I LOVE pistachio ice cream. Like I remember in college sitting on my bed with my roommate eating pistachio ice cream while watching Yellowstone. Those were the best days out there folks, easy going. Also, if you haven't seen Yellowstone, you are missing out. My favorite TV show. Unfortunately, it's only shown on Paramount and Amazon, and you know your homegirl owns all the seasons...which is another annoying thing. I accidentally bought season 1 on one account, and bought season 2 on another account. I know...I'm an idiot (eye roll).


Anyways, back to the pistachio ice cream. Since it was St. Patrick's Day, I thought it would be appropriate to make a green desert...plus I've always wanted to try my hand at pistachio ice cream. The only thing I would change about this recipe is to add a little something extra. So, you can find the recipe below! Let me know how you like it.

Ingredients:

- 1 c. whole milk

- 2 c. heavy whipping cream

- 1/2 c. sugar

- 1 (3.4 oz) package pistachio instant pudding

- 1/2 tsp. vanilla

- optional: coconut, pecans, or almonds

- optional: food coloring (I added a little more green to brighten it up to make it more St. Patty's Day approved)


Directions:

1. Mix all ingredients in a bowl and put the bowl in the fridge for 2 hours.

2. After 2 hours, take out the mixture (it will be thick like pudding...it is okay, nothing is wrong with it). Then put it into your ice cream maker and following the ice cream maker's directions.

3. Enjoy!
