I saw someone post something on Instagram about making cute colorful spring cookies. I thought since Easter was around the corner it'd be perfect time to make some cookies...and add a little spring color to them. Well, the flavor was great, but you can't really tell I added a little bit of color to them.
I have to be honest, I was a little hesitant to make these because I've always heard they are hard to make. Y'all, I don't know where I heard that from, these babies are stinkin' easy to make and they taste delicious. You can't get enough of them. The only thing about this recipe is it makes about 20-25 cookies. So if you need large amount, this recipe is easy to double and not over-do your kitchen aid. Ingredients and directions are below. Enjoy these melt in your mouth cookies!

Ingredients:
- 1 c. Butter (softened)
- 1 1/2 c. Powdered Sugar
- 1/4 tsp. Salt
- 2 tsp. Vanilla Extract
- 1 3/4 c. Flour
- 1 c. Chopped Pecans
Directions:
1. Preheat oven to 350 degrees Fahrenheit and place a cookie mat on a cookie sheet.
2. In a bowl, cream together butter (cut up into tablespoons to make for easier mixing), 1/2 cup powdered sugar, and salt until combined.
3. Mix in vanilla extract.
4. Add in flour. It will seem sandy for a couple minutes, but it will eventually blend in with the creamed mixture to cream a dough.
5. Add in the chopped pecans.
6. Use a small cookie scoop and shape the dough into balls. Place on the cookie sheet - you can put up to 20 on one pan because the cookies don't expand as they cook. Bake in the oven for 13-15 minutes. While one cookie sheet is baking, put the rest of the dough in the fridge until it's time to bake them.
7. Allow cookies to cool for 8 minutes. Then place the remaining cup of powdered sugar in a bowl, roll the cookies in the powdered sugar and place on a cooling rack to cool. This first layer will melt the powdered sugar a little.
8. After the first layer of powdered sugar has set and cookies have cooled, roll the cookies in the powdered sugar again then place in an air tight container to enjoy later.
